About the Estates:
- Tat Tvam Asi: Nestled in the Baba Budan Giris in Karnataka, Tat Tvam Asi farm is surrounded by natural beauty and biodiversity in the sacred region where the first seven seeds of coffee were planted in the early 1600s. At altitudes above 1400 msl, the clouds and mist often visit the plantation that is kept semi-wild; giving nature a chance to be the protagonist. This plantation and farm is run and cared-for by Vishal and Aditi Mehta, and their amazing team.
- Salawara: Sharan is a passionate coffee planter, he specialises in making very distinctive nano lots using different unique recipes. The Estate located in Hassan (Karnataka), grows both Arabica and Robusta. We selected a small nano lot of 350 kg.This red honey from the Chandragiri fruits has been fermented in a whisky barrel for several days, then pulped and retained. 50 % of the mucilage is dried slowly under controlled greenhouse drying yards using African beads.
- Skia: Run by Ashish Rao, with passion for farming and agriculture despite having a professional career in the oil and gas sector, has dedicated the last four years immersing himself in the world of Skia. With a scientific approach and a keen interest in value addition through molecular fermentation and drying techniques, he has diligently worked to make Skia come to fruition.
As a student in the molecular course offered at Marcs, he took his first steps into the realm of post processing and drying coffee. Since then, we have worked closely to enhance the quality of his coffee beans.
The New Shine Soundtrack is a unique auditory experience created to complement your coffee journey. As part of Marc’s Coffees Music Program, each artist receives the pre-launch coffee and draws inspiration from its flavours and aromas. This sensory inspiration is then transformed into a soundscape, designed to replicate the coffee’s flow, depth, and complexity.
For New Shine, we’ve collaborated with Shaun Moses, a prominent figure in the underground electronic music scene from Goa, India. Shaun has meticulously crafted a track that reflects the rich, layered experience of the coffee, enhancing the natural sweetness and acidity with deep, textured beats. His soundscape mirrors the evolving flavours of the cup, creating an immersive, multi-sensory journey.

Single Espresso SOP
Equipment: Espresso Machine, Grinder, Scale, Tamper and Cup.
Coffee: 12 grams, Grind Size: 550 microns
Output: 25 grams espresso
Pressure: 7 bars
Water Temperature: 92 °C
Brew Time: 30 seconds
Steps:
- Grind: Weigh and grind 12 grams of coffee beans at 550 microns.
- Dose: Add the ground coffee to the portafilter and level.
- Tamp: Tamp firmly and evenly, ensuring a smooth, level bed.
- Pre-infusion: Begin extraction with a 5 ml pre-infusion.
- Extraction: Brew to achieve 25 grams of espresso in 30 seconds.
- Serve: Pour into a pre-warmed cup and serve immediately.
Note: Ensure water temperature is set to 92°C.
SOFI – 72 SOP
Equipment: Sofi Brewer,, Grinder (EK43-S), Scale, Cup, Kettle
Coffee: New Shine
Vessel: 200 ml cup
Ratio: 1:14 (for every 1 gram of coffee, 14 ml of water)
Steps
→ Grind 17 grams of coffee beans to a medium-coarse setting (800 microns), should feel like fine salt.
→ Heat 240 ml of water to 87°C.
→ Add the coffee grounds to the Sofi .
→ Place the Sofi on the scale and tare it. Start your timer.
Pouring Stages:
- First pour: Pour 30 ml of water for blooming and let it bloom for 30 seconds.
- Second pour: Pour 110 ml and gently agitate.
- Third pour: Pour the remaining 100 ml (totaling 240 ml) and swirl 3 times top to bottom and side to side.
