The story: It all began in 2021, when Ashish and Marc joined forces to explore the art of producing small lots of high-quality coffee at Ashish’s newly acquired plantation in Kakabe, Coorg.
After 4 years of experimenting with natural fermentation recipes, Ashish is now crafting consistent nano lots of both Arabica and Canephora.
The Skia Surprise is one of these treasures: A 150 kg Arabica nano lot, fermented with coffee cherry yeast and lactic bacteria. The result? Distinct flavors, silky textures, and creamy mouthfeel — a true surprise for coffee lovers ready to explore new horizons.
Recommended Brewing: We found this coffee shines in a V60 with Sibarist FAST filters. Here’s a simple recipe to start with (feel free to fine-tune ratio and grind size to your taste):
•15 g coffee, fine grind to ~500 microns (≈10 clicks on Comandante C30)
•Water: 96°C
•Bloom: 60 ml, 30 sec
•1st pour: 100 ml
•2nd pour: 110 ml
•Total: 200 ml in 2:30 min
